Here is a sampling of our favorite goodies that we make for our
dessert sails and charters . . . Enjoy!
Blueberry Cake
(from Mike's Mom)

2 cups fresh  or frozen blueberries
1 cup butter
2 cups sugar
4 eggs
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla

Preheat oven to 350 degrees and grease and flour a 9" tube pan.
Cream butter and sugar.  Add eggs one at a time, beating after each addition.  Sift  flour,
baking powder and salt then add to creamed mixture.  Add vanilla.  Add berries and gently
mix with a wooden spoon.  Place in tube pan and bake for about one hour or until toothpick
inserted into cake comes out clean.
Chocolate Chip Oatmeal Cookies

1 1/3 c. flour
3/4 t. baking soda
1/4 t. salt
3/4 t. cinnamon
3/4 c. butter
1/3 c. sugar
1/2 c. brown sugar
1 egg
12 oz chocolate chips
3/4 c. chopped nuts
3/4 c. oats (not quick oats)

Preheat oven to 350 degrees.  Mix first four ingredients in a small bowl.  In a separate bowl,
cream butter and sugar, then add an egg.  Add the dry ingredients to the butter mixture and
mix well.  Finally combine the chocolate chips, nuts and oats and add to the batter,
incorporating well (you may need to use your hands, this is a stiff batter).  Place large
tablespoonfuls on ungreased cookie sheet and bake for 9 - 11 minutes unti ljust light brown.

This is a great recipe for improvising - try half chocolate and half white chocolate chips, white
chocolate chips and dried cranberries or add a little coconut.
